Moraiyo called as Sawa millet, Little Millet, Saamai, Moraiya etc. It is one of the varieties of millet. In India people generally have this in meal during fast or vrat.

Millet has lots of health benefits. It is one of the most digestible and non-allergenic grain available around the world. It is low in calorie.

There are lots of ways to cook it. You can make puri, khichdi or upma and even sheera or halwa. Here I have posted recipe of Upwaas Idli & Dhokla

Ingredients :-

  • Upwas Moraiyo (Barnyard Millet) – 1 cup

  • Pearl sago (Pearl sago) – 2 tbsp

  • Curd – 1 cup

  • Oil – 2-3  tbsp.

  • Rock salt – as per taste

  • Baking Soda – half teaspoon

We will make Idly and Dhokla from same batter, for Dhokla we need additional ingredients are below

  • Curry leaves – 10-12

  • Green chillies – chopped lengthwise

  • Ginger & Green chilly paste

  • Red chilly powder – a pinch

Method / Directions & Preparation : –

Step 1

  • In a mixer, add moraiya & sago pearls and grind. Coarsely grind it.

Now !

Step 2

  • Shift it into a bowl and add curd in it. mix well to make batter, add little water if required to make consistency like we make for idly.

  • Batter is ready, keep it aside for 15-20 min.

  • After 15-20 min add salt & baking soda in batter & mix well.

Divide this batter in 2 portions, we will make idly from one portion & Dhokla from another portion.

Step 3

For Idli

  • Apply oil in idly stand & pour the batter in the idly stand.

  • Steam for 10 minutes and remove idlies from stand after five-six minutes.

Now !

  • Idlies are ready to serve.


For Dhokla

Step 4

  • Grease Dhokla plate with oil.

Now !

  • We will make Dhokla from other portion of batter.

  • Add ginger & green chili paste in batter, mix well.

  • Pour the batter in plate, sprinkle some red chili powder over it.

  • Steam for 10-12 min.

  • Switch off the flame after 10 min but remove the dhokla after 5-6 min.

  • Mix well and add fry / tadka on it.

Step 5

  • Before adding tadka / fry we will cut dhokla into small pieces.

Step 6

Now !

  • Heat oil in a pan, when oil is hot, add little ginger paste & curry leaves & switch off the flame.

  • Now add green chilies sliced in it and keep it aside for 30-0 seconds.

  • Now ! spread tadka on dhokla.

  • Serve with coconut chutney, green chili chutney, coriander chutney, mint chutney, tomato chutney or tamarind chutney (choose any one)

Suggestions :-

Do not fry green chilies on flame as fried chilies cause lungs related problems.
