Benefits of Cucumber tomato salad: –

You can eat fresh tomatoes and cucumbers on their own, but you can also eat them together in a salad for a snack or light side dish. Cucumber tomato salad can be rich in essential nutrients, such as potassium and vitamin C, and tomato and cucumber salad can also help you lose weight.

Cucumbers contain 95% water. This gives them a natural cleansing property. Cucumbers help eliminate accumulated pockets of wastes and chemical toxins that can harm the body. Eating cucumbers, therefore, is an excellent way to detoxify the body and keep the body hydrated.

With the help of salad dressing you could store salad for 3-4 hours without loosing nutrition & olive oil might be the best choice of salad dressing when it comes to absorbing nutrients from the salad. It appears that monounsaturated fats provide the most efficient absorption of carotenoids, pigments with antioxidant activity present in vegetables and fruit.

Main Ingredients: –

1  Fresh Cucumber

2 Tomatoes or 5-6 Cherry Tomatoes.

1/2 Onion, Coriander leaves & ginger slices (optional)

You may add a handful of grapes, beetroot or cabbage etc. to enhance the taste.

Salad Dressing Ingredients: –

1 tbsp. of Extra Virgin Olive Oil.

1 tbsp of lemon juice  Or 2 Tbsp. of Apple Cider Vinegar.

1 Garlic Clove crushed (optional).

1  tsp. of Honey.

A pinch of Rock salt (Pink Himalayan salt).

A pinch Of Black Pepper.

Method / Directions :-

Step 1

Wash Tomatoes & Cucumber with plain water & dip 2 min in lukewarm water.

Cut Tomatoes & cucumber into slices or cubes.

Step 2

Take 1 tbsp. of Extra Virgin Olive Oi in a bowl & add 1 tbsp of lemon juice, 1 Garlic Clove crushed,1  tsp. of Honey,

A pinch of Rock salt (Pink Himalayan salt) & black Pepper into it.

Mix well to make dressing.

Preparation: –

Take chopped tomatoes & cucumber in a bowl.

Sprinkle fresh salad dressing over it.

Mix it well, Now its ready to serve or you could consume it in 2-3 hours as olive oil & vinegar dressing acts as a preservative. You could carry this salad with you in air tight tiffin box without loosing nutritional values.

Note :- For best results consume fresh & take before meal.

You may sprinkle 1/2 tsp. of ground cumin over it to enhance taste & flavor.
